Banana Bread

So yesterday I was really hungry for some banana bread and there were some bananas staring at me from the counter that were way past their prime.  I whipped up a loaf of my mom's recipe.  Now I am not much of a baker, that is my mom's job but I can make this and have it turn out yummy!  It is a little different, but it is moist and so yummy that it will not last long on the counter.  The nuts are optional, I usually don't put 'em in because one of my kids doesn't like them in there.  I was feeling adventurous yesterday and threw in some chocolate chips and it was divine!! 

Here is my mom's recipe for Banana Bread:

1 3/4 cups all-purpose flour
1 1/2 cups sugar
1 tsp baking soda
1/2 tsp salt
2 eggs
1 cup mashed ripe bananas (2-3 medium)
1/2 cup vegetable oil
1/4 cup plus 1 TBS buttermilk (I used regular ole milk and worked fine)
1 tsp vanilla
1 cup chopped walnuts

In a large bowl, stir together flour, sugar, baking soda and salt.  In another bowl, combine eggs, bananas, oil, buttermilk and vanilla.  Add to flour mixture, stirring just until moistened.  Fold in nuts.  Pour into a greased loaf pan.  Bake at 325 degrees for 1 hour and 20 minutes or until bread tests done.  Cool for 10 minutes before removing from the pan to a wire rack.  Makes 1 loaf.
